A. Side bar box, click on the thing that says edit or something (mine says amend chest cuz it's Pirate English) and click the check mark on the box you want shown.

A. you can't remove a like. it just makes them look stupid anyway. unfriend them or block them and your future statuses won't be bothered.

A. Yes, it's possible.
Go to Account Settings > Privacy Settings > Customize Settings > Things I share > Relationships > Customize > Hide this from > Put the name of your Friends you want no to see your Relationship status
